The Chef

The kitchen is run by young energetic Matthias Speybrouck, who got his stripes with Piet Huysentruyt in the Ardèche, Sergio Hermans from Oud Sluis and Kobe Desramaults from In De Wulf.

Va et Vient stands for original dishes with a twist and a prominent role for seasonal products from local growers and producers with a foreign hint here and there.

In the meantime Matthias has also had the time to create his own style and identity on the plate. He himself describes it as “Rough and Refined”, which is also the slogan of the house.
